Ingredients

Salad

  • 4.5 cups Black Beans cooked, rinsed, and drained

  • 1 cup Corn canned (drained) or defrosted

  • 1 large Bell Pepper orange, red, or yellow

  • 1 cup Cherry Tomatoes Quartered

  • 1 small Red onion chopped

  • 1 medium Jalapeno finely chopped

  • 2 tbsp Lime Juice

  • 0.25 cups Extra Virgin Olive Oil

  • 0.25 cups White Wine Vinegar

  • 0.5 tsp Chili Powder

  • 0.5 tsp Ground Cumin

Optional Garnishes

  • 1 to taste Feta Crumbled

  • 1 to taste Lime wedged

Directions

  1. Combine all the salad ingredients in a large serving bowl.
  2. Refrigerate to allow flavors to build
  3. Top with optional garnishes and enjoy
