Salad
4.5 cups Black Beans cooked, rinsed, and drained
1 cup Corn canned (drained) or defrosted
1 large Bell Pepper orange, red, or yellow
1 cup Cherry Tomatoes Quartered
1 small Red onion chopped
1 medium Jalapeno finely chopped
2 tbsp Lime Juice
0.25 cups Extra Virgin Olive Oil
0.25 cups White Wine Vinegar
0.5 tsp Chili Powder
0.5 tsp Ground Cumin
Optional Garnishes
1 to taste Feta Crumbled
1 to taste Lime wedged
Directions
- Combine all the salad ingredients in a large serving bowl.
- Refrigerate to allow flavors to build
- Top with optional garnishes and enjoy
