Ingredients
| 16 oz Whole Wheat Penne Pasta |
| 0.375 cup Red Wine Vinegar |
| 1.5 tbsp Lemon Juice |
| 6 count Garlic Cloves, crushed |
| 6 teaspoons Dried Oregano |
| 1 cup Extra Virgin Olive Oil |
| 1 pint Cherry or Grape Tomatoes, halved |
| 1 count Medium Red Onion, cut in half and then sliced lengthwise |
| 1 count Green Bell Pepper, chopped |
| 1 count Red Bell Pepper, chopped |
| 1 count Medium Cucumber, chopped |
| 1.5 cup Greek Sliced Olives or Olive Salad |
| 7 oz Feta Cheese, crumbled |
| 1 to taste Salt |
| 1 to taste Pepper |
Directions
- Get a very large bowl or pot.
- Cook pasta to al dente instructions, drain and rinse with cold water until the pasta is no longer hot
- Mix all the ingredients in the very large bowl
I modified the recipe a bit from the original. The original uses ridiculous proportions. This does a really good job of immitating the BJ's mediterannean salad.
It's still a work in progress, need to hone in how much red wine vinegar I should use with less olive oil.
