Greek Pasta Salad

16 oz Whole Wheat Penne Pasta
0.375 cup Red Wine Vinegar
1.5 tbsp Lemon Juice
6 count Garlic Cloves , crushed
6 teaspoons Dried Oregano
1 cup Extra Virgin Olive Oil
1 pint Cherry or Grape Tomatoes , halved
1 count Medium Red Onion , cut in half and then sliced lengthwise
1 count Green Bell Pepper , chopped
1 count Red Bell Pepper , chopped
1 count Medium Cucumber , chopped
1.5 cup Greek Sliced Olives or Olive Salad
7 oz Feta Cheese , crumbled
1 to taste Salt
1 to taste Pepper
Directions
- Get a very large bowl or pot.
- Cook pasta to al dente instructions, drain and rinse with cold water until the pasta is no longer hot
- Mix all the ingredients in the very large bowl
I modified the recipe a bit from the original. The original uses ridiculous proportions. This does a really good job of immitating the BJ's mediterannean salad.
It's still a work in progress, need to hone in how much red wine vinegar I should use with less olive oil.
