Ingredients

Salad

  • 14.5 oz cannellini beans , drained and well rinsed

  • 14.5 oz garbanzo beans (chickpeas) , drained and well rinsed

  • 1 cups cherry tomatoes , halved

  • 2 count Persian cucumbers , halved lengthwise and thinly sliced

  • 0.25 cups red onion , thinly sliced

  • 0.5 cups peppadew peppers , rough chopped

  • 0.5 cups black olives , halved

  • 0.5 cups pimento stuffed green olives , halved

  • 1 cups colorful bell peppers , diced

  • 0.5 cups feta cheese , crumbled

  • 0.5 cups marinated artichokes , chopped

  • 10 count basil leaves , shredded

Dressing

  • 0.25 cups extra virgin olive oil

  • 4 tbsp red wine vinegar

  • 1 tsp dried Italian herbs , (thyme, oregano, rosemary)

  • 1 clove garlic , minced

  • 1 to taste salt

  • 1 to taste black pepper

Directions

  1. In a large salad bowl, mix together all the ingredients
  2. Serve immediately or refrigerate to allow flavors to meld together.
