Ingredients
Salad
14.5 oz cannellini beans , drained and well rinsed
14.5 oz garbanzo beans (chickpeas) , drained and well rinsed
1 cups cherry tomatoes , halved
2 count Persian cucumbers , halved lengthwise and thinly sliced
0.25 cups red onion , thinly sliced
0.5 cups peppadew peppers , rough chopped
0.5 cups black olives , halved
0.5 cups pimento stuffed green olives , halved
1 cups colorful bell peppers , diced
0.5 cups feta cheese , crumbled
0.5 cups marinated artichokes , chopped
10 count basil leaves , shredded
Dressing
0.25 cups extra virgin olive oil
4 tbsp red wine vinegar
1 tsp dried Italian herbs , (thyme, oregano, rosemary)
1 clove garlic , minced
1 to taste salt
1 to taste black pepper
Directions
- In a large salad bowl, mix together all the ingredients
- Serve immediately or refrigerate to allow flavors to meld together.
