Easy Orzo With Spinach and Feta

Ingredients
| 4 tbsp Butter Substitute |
| 7 large Scallions, sliced thin and trimmed |
| 4 large Garlic Cloves, Minced |
| 16 oz Baby Spinach, Lightly Chopped |
| 16 oz Whole Wheat Orzo |
| 4 tsp Lemon Juice |
| 5 oz Crumbled Feta |
| 1 cup Frozed Peas, thawed |
| 2 cups Chopped Fresh Dill (Parsley or Cilantro as a substitute) |
Directions
- Heat a pot of water for the orzo. Salt the water and cook orzo to instructions. Reserve 1-1.5 cups of liquid for the sauce (we want the starch)
- In another large pan, add the water and reduce a bit. Slowly add leafy greens to reduce size and make room in the pot. Add the rest of the ingredients.
- Serve and use more cheese and scalions as garnish
